Chef Zachary Lewison of the Union Bar & Grille (优年美式餐厅) gave a cooking class recently inside the restaurant's kitchen. With his assistant he made a seared Ahi tuna salad, and char grilled a salmon, a rib-eye steak, as well as molten chocolate cake, a popular dessert.
The tuna sashimi was seared very briefly to get a golden edge and a different taste, while still fresh inside, along with a rocket and cucumber salad. Char-grilled salmon and rib-eye steak were both done to perfection in terms of taste and looks. According to the chef, American cuisine is a melting pot and has developed to have distinct characteristics of its own. Union Bar & Grill offers genuine American cuisine, combining its rich diversity with the best ingredients in Beijing. Apart from fresh local produce, it uses imported specialties such as Australian beef and Mongolian prime rib.
The menu offers some American favorites, such as tangy BBQ baby back ribs slowly cooked, fresh sauteed sea bass, and char-grilled rib eye steak. There are of course the burgers, which can be customized with smoked bacon or sauteed mushrooms. The restaurant has also developed a special Asian menu with classic dishes like yushing wok fried pork with rice, and green pepper beef steak.
Union has a comfortable bar with a sleek ebony counter, leather stools and favorite American drinks, as well as wines from other parts of the world. The dining room is designed in classic New York fashion with exposed brick walls, and leather banquettes. The average bill is 300 yuan per person.
