In Beijing's kaleidoscopic foreign cuisine landscape, Spanish food is definitely the type that can give your palate a pleasant surprise, because just like Chinese dishes, Spaniards' Mediterranean-style cuisine, which is characterized by geographical diversity and an abundance of ingredients, never stops to create an unending banquet of flavors. But when they come to China, do they have to be localized? What are the commonalities between Chinese and Spanish cuisine culture? Today we talk to Alberto Becerril, the executive chef at Agua, a Spanish restaurant in Beijing.
